Do you ever crave breakfast food for dinner? Every once in a while we just can’t resist the goodness that comes with breakfast! I have seen recipes for breakfast nachos and it intrigued me. Why not have nachos for breakfast? I never realized that breakfast nachos could be so good! The chips are crispier and the other ingredients just marry so well. I think my husband thought I was crazy when I told him that I was going to make these but at the end of the day, he fell in love with them!
I decided to try a different brand of eggs, Nellie’s Free Range Eggs and wanted to see if there was any difference. Nellie’s Free Range Eggs are dedicated to the humane treatment to their hens, and their eggs are indeed Certified Humane. Hens live on free-range, small family-run farms. A network of over 125 in fact! I decided that they take care of their chickens like I want to take care of my family!
Ingredients
- tortilla chips 1 bag
- 4 large eggs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups shredded cheese
- 1 package of bacon cooked and crumbled
- 1 package breakfast sausage cooked and crumbled
- 1 bell pepper finely diced
- 1 bunch of green onion sliced
- Salsa sour cream, jalapenos, or other additions for serving as desired.
Instructions

Preheat oven to 450 degrees F.

In a medium pan over medium-high heat, scramble and cook the eggs with salt, and pepper. Make sure to keep stirring often until cooked through.

Lay half of the tortilla chips on a parchment paper lined baking sheet. Sprinkle with half of the cheese. Top with half of the eggs, bacon, sausage, and peppers.

Repeat layers so that everything is used, then bake for 10-15 minutes until heated through. Sprinkle with green onions and serve as desired.
